The retail bakery is located in the Victoria Public Market, surrounded by office buildings and an average of 1 new condo building a year (part of a large development project) on our block or the next block over (you can see every new building from our door)
The retail bakery is part of the public market but we have our own door as well. When our market gates are open, you can come in from the market directly. The market is in charge of management, security, cleaning, promos and deco, advertisement.
We could develop sandwiched further for the lunch crowd, offer more specialty coffee (we don't have a commercial set up and that would bring in serious revenue). The easy expansion is in wholesale because the production bakery is running only 8 hours a day, so you could produce a lot more if you are good at managing work force. there is high demand from local coffee shop, restaurant and grocery store for local baked goods. Sales at summer market have generated up to $50.000 a year as well, not included in the sales number posted (480.000)
No bakery in the Market, it's part of our non competition lease agreement.
We have no experience running a large retail business and at the pace it's growing, we feel it will be a challenge to run the work force necessary.
9 to 6 monday to saturday
11 to 5 sunday
